Bikini Recipe
Serves 10 guests
To make the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Put all the items inside a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Then, remove from the heat and leave to cool down entirely. Decant into an sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for around a month.
To make Premix: Combine all the spirits and syrup in a sizeable container, let it rest for one hour, then strain , ideally through muslin, to ensure it's completely strained.
When ready to serve: Add 85ml of the cocktail base into your cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Filter into a frosted cocktail glass or similar, top with the cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
